I woke up yesterday and it was easter friday and my thought was immediately on food. as a child growing up, easter friday was FREJON day. I remember what my parents house used to look like. it was like a circus because everyone wanted their share of Frejon. since this was a once a year meal, you wanted to eat enough to last you till the next year.
yesterday, I began to crave for this special delicacy that I hadnt eaten in about 5years. searched online to find out what type of beans I was dissappointed as I must have found about 7 different types of beans supposedly used to prepare this dish.
I knew what the beans looked like and so I went out in search for the beans that no one seemed to know the english name for.
After a few hours search in a number of african and asian shops, I found it!
the beans used traditioanlly to make frejon is cowpeas. I couldnt want to prepare this wonderful dish.
I finished cooking at about 10pm, though very late, I just couldnt resist tucking into it.
whilst eating, I began to think, should Frejon be a once a year meal??
