Roasted Mediterranean Soup

This soup for me is one of the classic soups out there.

I love the soup because you can have it anytime in the year and it really helps my appetite. if you are in a position whereby you haven't got an appetite, do try this heartwarming, delicious and simple soup.

Ingredients:
4 fresh tomatoes
1 whole onion
3 sprigs of basil
1 table spoon tomato paste
2 cubes chicken or vegetable stock
Salt
1 table spoon of olive oil
Mixed herbs
Fresh thyme
Method:
1. Half the tomatoes, onion, some thyme, herbs and place them in baking tray, add a little oil and straight in oven to roast for 12 mins.

2. Add this into soup pot on stove and add the remaining ingredients, allow it to simmer for 20mins, turn off stove, set pot aside for 5mins, then blend with food blender.

3. Finely chop the fresh basil on top, serve soup with any choice of bread.
